COLD PRESSED - EARLY HARVEST

Crafted from approximately 3,460 vibrant, healthy green olives, this oil offers delightful aromas of fresh fruit and cut grass. On the palate, it’s smooth and flavorful, revealing notes of fruit, green apple, tomato vine, fig, and almond, finishing with a pleasantly bitter and spicy touch.

ABOUT THEM :

Steffi and her team are behind this beautiful olive oil. The olive grove embraces their historic estate, and they share a close bond with it—they actually live right beside it. All their agricultural practices are overseen by the CAECV, the Organic Farming Control Authority of the Valencian Community. Their olives are grown naturally, free from herbicides and pesticides. They nurture the soil to encourage biodiversity, allowing native flowers and plants to thrive. It’s living, healthy soil—resilient in the face of an increasingly demanding climate.

FOOD IDEAS:

  • The complexity of this coupage adds depth to poultry—rub onto the skin before roasting and drizzle again before serving.
  • The blend’s fruity and slightly peppery character balances earthy beets and tangy cheese—perfect for a vibrant salad.

  • Stir in at the end for a rich, velvety finish like a Mushroom risotto. The aromatic notes elevate the umami of mushrooms beautifully.
  • Toasted Sourdough with Roasted Capsicum & Anchovy; a bold tapa where the coupage enhances the sweet-smoky-salty trio with elegant bitterness and fruit.

TIP : Their balanced flavour profile makes them versatile—ideal for recipes that combine sweet, savoury, and earthy elements. Use them at the end to tie all the flavours together with one final, fragrant touch.
